Bean and Coconut Stew in a Hay Box
I use black beans or butter beans, but any combination of beans is fine for this recipe.
I also use any combination of vegetables that happen to be hiding in the pantry. Chop the vegetables fairly small to allow them to cook properly.
Ingredients
1 tablespoon oil
2 onions – chopped
2 garlic cloves – crushed
1 leek
1 pepper
1 courgette
1 aubergine
1 tin beans or precooked beans
1 tin tomatoes - squished
3 tablespoons molasses
½ can coconut milk or 3 tablespoons coconut powder dissolved in a little hot water
salt
Method
Cook the onion and garlic in the oil
Add all the chopped vegetables and continue cooking for around 3 minutes
Add the coconut milk, salt, molasses and tinned tomatoes. If using whole tomatoes squash down well
Mix all together and add enough water to come over the top of the vegetables
Season with salt
With the lid on the pot bring to the boil and continue boiling for around 8-10 minutes
Place in the haybox, wrapped in a towel or blanket for 3 hours
Serve with Bread, Rice or Couscous
